3 tortellini recipes for Tortellini Day

To celebrate National Tortellini Day, we're lifting a fork to these fantastic pillows of pasta goodness with 3 quick sauce recipes to accompany your tortellini. Honestly, I'm just glad other people appreciate pasta as much as I do!

All of the below recipes begin with tortellini If you're like me and don't have time to make your own tortellini most supermarkets have ranges of ready to cook ones that take a matter of minutes to cook. My personal favourite is the Rana ones as there is a range of different fillings that can be enjoyed with just a blob of butter, and a sprinkling of cheese. Below, is a quick list of 3 quick sauce recipes to spice up your tortellini. 

Quick and Simple Sage Butter

When I was a kid, one of my favourite types of pasta was this quick and simple sage butter pasta. Its so, so easy to make and great for the whole family. 

Ingredients

  • 3 tbsp butter
  • 12sage leaves
  • Salt and pepper to taste
  • Grated Parmigiano Reggiano cheese

Method

In a large frying pan, melt butter and sage over medium heat until the butter has melted, about 3 minutes.

In the meantime, cook the tortellini according to pack instructions. Drain, add the tortellini to the frying pan, toss and season with pepper to taste.

Divide the tortelloni among plates and serve with grated Parmigiano Reggiano.

Tomato and feta tortellini bake 

This quick and easy recipe requires only 4 main ingredients: Cherry Tomatoes, Feta (or other soft cheese), Oil and seasoning. 

Ingredients - For approx 4 servings

  • 1 punnet of cherry tomatoes
  • 1 Red Onion
  • 1 block of feta (most soft cheeses will work) 
  • Salt, Pepper, Garlic and Onion Powder
  • Olive Oil 

Method

To create this one, simply chop veg roughly to the same size, pop everything above in a baking tray and drizzle over a good glug of olive oil. Roast in the oven at 180 degrees for around 30 minutes, keeping an eye on it to ensure everything gets soft and not crispy. 

Once everything is cooked, stir to combine (it should create a sauce) and toss in cooked tortellini and a splash of pasta water to make the sauce creamy and a bit smoother. 

*Tomato can be substituted for almost any veg, Mushrooms also work amazing! 

Home Made Pesto 

This pesto is quick and easy to make, with just 5 ingredients and takes only 5 minutes. 

Ingredients

  • 1 cup of fresh basil
  • 3 garlic cloves
  • 3 tbsp pine nuts
  • Salt, and Pepper 
  • 1/3 cup parmesan
  • 1/3 cup of olive oil

Method

Combine basil, garlic, parmesan and pine nuts in a food processor and season with salt and pepper. Add the olive oil slowly whilst the motor is running until the mixture is emulsified. 

Pour it over cooked tortellini. Any remaining can be stored in the fridge for up to a week.
